25/02/08 – Day 1

The first day of the challenge! It’s gone well. Yesterday I did some shopping and spent ages in the shops trying to find out what would be the cheapest options. Today I went to another shop for cheap vegetables and found a 29p packet of biscuits – less than a penny each. And I bought some jelly for 19p. That’ll be good a few days in.
I started off with porridge – the way every day will probably start. A little bit of milk made up from milk powder added a bit to it.
I spent part of the morning making bread rolls – I think my first ever attempt at making bread with yeast. It was so good to have hot fresh bread straight from the oven.
I found myself wanting to eat through the day even though I haven’t eaten less than I normally would do. I think it was a psychological thing because I know I can’t really afford to.
For dinner I made lentil bolognese (recipe in the recipe suggestions). This is something I make quite often anyway. I really enjoy it and it goes great with pasta. This gave me much needed vegetables and protein.
Today I have felt great enthusiasm for the challenge and keen to spend time making things. I hope I can maintain this throughout the two weeks. I want to see how inventive and creative I can be with just £1 each day.
